vegan banana chocolate walnut muffins
Although I’m not a full time vegan, I enjoy challenging myself by experimenting with baking & cooking like one!
There’s no denying these muffins are a sweet treat. However, they’re still packed full with ingredients that support your health & wellness! For starters, walnuts are a super source of omega-3 fats, which helps reduce the risk of heart disease, among other benefits. Additionally, walnuts decrease inflammation throughout the body and support a health gut. Then there are bananas, which are a powerhouse of nutrients. Many of those nutrients help moderate blood sugar levels, as well as supporting your kidneys, heart & stomach.
Now, looking at these, I can imagine some of you are thinking, “I don’t think chocolate is vegan Emma!” And to a degree, you’re correct! However, there are in fact, many chocolate options for vegans. The easiest way to figure it out? Read the ingredient list! You may see “cocoa butter” which, contrary to how it sounds, is vegan. However, watch out for “whey” and “casein” which are milk derived. If you’re feeling unsure, take a look at the “Allergen Information”, which will always list if a product contains milk.
Now, onto the good stuff!
WHAT YOU’LL NEED :
1 & 1/2 cup flour
1/2 cup white sugar
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tbsp. egg replacer mixed with 2 tbsp. water
3 browned bananas, mashed
3/4 cup plain almond milk
1/3 cup coconut oil
1/2 tsp. vanilla
1/3 cup chopped walnuts
1 & 1/2 tsp. cinnamon
1 heaping cup of vegan dark chocolate chips
TO MAKE IT :
Preheat the oven to 400 degrees Fahrenheit.
In a large bowl, combine the flour, sugar, baking soda, baking powder, salt, cinnamon & walnuts. Set aside.
Peel & mash the bananas.
In a large bowl fit for a mixer (or just another large bowl if you don’t have a mixer!) combine the egg replacer, mashed bananas, almond milk, coconut oil & vanilla.
With the mixer set to a medium speed, slowly add the dry ingredients to the banana mixture.
Add in chocolate chips, continue to mix until fully combined. The batter will be chunky!
Pour batter into a greased muffin tin.
Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
Let them cool a bit & enjoy!
